Tomato Lentil Pasta bake


I found a recipe for Tomato Lentil  Pasta bake in the TM book ,I have changed it a little as I only had tin lentils not dried at the time it also had 50gms Parmesan and 50gm cheese but since Parmesan cheese in not vegetarian I just used vegetarian friendly cheese.

                              Tomato Lentil Pasta Bake






100gms cheese
handful of basil
1 onion
3 cloves of garlic
25gm olive oil
400gms can tomato
220gm can lentils
300gm water
2tspn vegetable stock powder
120gm red wine
salt & pepper
1/2tspn cinnamon
500gms of spirals pasta

PRE HEAT OVER 180C

Place cheese & basil in TM bowl and grate for 5 minutes on speed 8.( set aside).
Place onion and garlic in TM bowl and chop for 5 sec on speed 6.
Add oil and saute 100'C for 3 minutes on speed 1
Add tomato's,lentils,water,stock and wine and cook for 15minutes on 100'C Reverse speed 1.
Cook pasta on stove top at same time until  al dente. ( you could cook pasta with Thermomix but I wanted to save time ).
Add salt and pepper and cinnamon and mix for 5 secs

Drain pasta and in a casserole dish add pasta and sauce mix,sprinkle cheese on top and cook for 20 minutes or until brown on top.

Zu Zu Zucchini Slice


I found this recipe and decided it would be easy enough to make into a nice vegetarian dish ,I would like to try it again without as much oil as 95gms seems a aweful lot. It's a tasty little slice,nice both hot and cold.

                                   Zucchini Slice





 
60grams Feta
60 grams cheddar cheese
375 grams zucchini roughly chopped
1 onion, large quartered
5  free range eggs
150 grams SR flour
95 grams vegetable oil
salt to taste
pepper to taste

Grease a ceramic lasagne dish.

Cube cheddar cheese & Feta, place in the TM bowl and grate on speed 6 for 5 seconds. Set aside.
Place zucchini, onion and in the TM bowl and chop on speed 5 for 3-4 seconds. Set aside with cheese.

Add SR flour, oil, eggs and salt/pepper to the TM bowl and mix on speed 4 for 20 seconds.

Return cheeses, zucchini, onion  TM bowl and combine all ingredients on speed 3 for 30-40 seconds on reverse.

Pour mixture into the prepared dish and bake in a pre-heated moderate oven for approximately 40 minutes or until browned.

Nanna's Awesome coffee Biscuits

This is my nanna's recipes that I have covert to be able to use the thermomix,you will have a lovely coffee smell through your house when these are cooking. Star rating 8


 
 

                         Nannas Coffee Biscuits

 

1½ cups  self-raising flour
115g butter or margarine, room temperature
½ cup sugar
1 egg
1 tbsp. coffee essence

Preheat oven to 170°C

 
Using an thermomix speed 2, cream the butter and sugar. Add the egg and coffee essence, then work the flour into the mixture to form a (sticky) dough, on speed 6.

At this point, pop the biscuit dough into the fridge for about 10-15 minutes, as the next stage is a little easier when the mixture is cool.

Turn the biscuit dough out onto a well floured surface, lightly knead then roll out thinly (3-5mm), using a floured rolling pin.

Cut into biscuit shapes then place onto a greased baking tray ( use baking paper).

Bake for 9 to 12 minutes. Remove the tray from oven and place the biscuits onto cooling racks after about 5 minutes or so.

Thermomix all in one - Spaghetti



So I saw this recipe on televison for One Pot Spaghetti and thought  hmmmm I can make that in my thermomix ( minus the meat of coarse). Anyway I have halved the below recipe because when I made it, it was a massive serving which we will be now eating for breakfast, lunch and dinner tomorrow..LOL

I found it very bland, but when I added a hit of chilli to hubbies plate he said it was much better. Personally I would not make it again without changing it, but as I said, I will blog all my trials, whether I like them or not. I do believe with a few tweaks it could be a very tasty dish.

                  All-in-one Thermo Spaghetti on Toast.


Ingredients
1 onion, diced
2 cloves garlic, chopped
1 carrot, grated
1 stick celery, grated
extra-virgin olive oil

1 Bay leaves
500 gms veggie mince

500mls vegetable stock
2 cans of tined diced tomatoes

tomato paste
chilli to taste
5 chopped up sun dried tomatoes
1 handful of dry spaghetti, broken into peices ( I would pre cook this next time).



In the Thermomix chop onion,  add veggie mince and garlic . Cook for 5 minutes on Temperature 100 until mince is warm. Add celery, carrot, bay leaves, chilli, salt and pepper. Cook for for 10 minutes on Temperture 100, reverse speed 1.
Pour in tined tomato and stock. Add spaghetti and cook for 15 minutes on Temperture 100, reverse speed 2 or until Pasta is al dente.

Serve on slices of toasted bread.

Rice soup



I came across a recipe for Rice soup  that I thought I would try and convert it into a vegetarian/thermomix recipe. I was surpised how tasty  and hearty this recipe was with such simple, and so few, ingredients.





                                 Rice Soup ( Star rating 7 )                  




1 onion
3 cloves of garlic
6 cups of vegetable stock (I use water & Vegeta)
6 chopped spring onions
2/3 cups of long grain rice (rinsed).
1 Tablespoon of soy sauce
1 Tablespoon Kacip Manis
1 Teaspoon chilli powder ( or to taste)
salt and pepper
1 teaspoon oil



Place onion and garlic, oil into Thermomix and chop on speed 7. Saute for 1 minute at Varmora Temperature 100.
Add all the remaining ingredients and cook on  Varmora Temperature 100 ,reserve speed 1  for 20 minutes.


 

 
 



An introduction to my Thermomix convert Vegetarian recipes


Veggie Mel here... I have decided to start blogging my thermomix recipes that I have taken the initiative to convert to vegetarian or vegan recipes.

I think the hardest part for me has been finding recipes that are vegetarian freindly. Especially when it comes to the Thermomix. Sure they have a book out, but it is very limited and of course I will try all of the ones in the Thermomix book and let you know how they turned out.
I will do a star rating for them as well with 10 stars being the highest score and 1 being "I won't be making this again".

Some maybe a huge success and some may fail, but it should be a fun experiment for all that are interested.

I will blog my recipes (with photos) and hope you all enjoy reading and trying them for yourself.
